Outdoor Pizza Oven - Building the oven base
Recommended Slab Size: 1400mm wide x 1500mm deep
Minimum size: 1200mm wide x 1350mm deep
- Lay the ceramic base insulation in position. The cooking base insulation has been cut to size with a centre line marked.
- Start laying the clay bricks from the front both side of the centre line
- Cut bricks to fit the insulation base.
Installing the oven dome
- Stand the oven upright on its entrance 300mm from the front of the concrete base. Lean the oven forward so it is resting against the slab.
Three men will be required, one either side of the oven and the third at the oven entrance.
Lift onto the brick cooking base.
Use a car jack to lift and position oven.
- Cut out the foam chimney plug located at the top of the oven entrance.
Install the oven fascia if applicable
- Standard fascia: The return at the bottom fits under the insulation base, the facia should then be pushed hard against the oven front, then tie the fascia back to the dome with wire threaded through the brackets at the back of fascia.
- Deluxe fascia: It will fit between the marble slab/tiles and the brick cooking base. Tie the fascia back to the dome with wire threaded through the brackets at the back of fascia.
Install insulation
- Insulate the oven with the ceramic fibre insulation blanket provided.
Note: If you use 2-3 layers of ceramic fibre insulation, this will greatly increase the efficiency of the oven and reduces the amount of render.
- Install chimney flue.
- It is very important to insulate around the flue.
- Cover insulation blanket with builder’s sissalation or 2/3 layers of aluminium foil.
- Cover the sissalation / al foil with chicken mesh.
Note: The stainless steel surround is only for aesthetic purposes. You can brick around the oven entrance, mosaic, tile or just render.
- Render approximate 2 to 3 layers over the chicken wire with normal cement and yellow sand.
- Each layer 15- 20mm thick
The more render that is applied the better the insulation.
- Hardware outlets sell bags of Render It, you will need 4 to 5 bags depending on how thick or what shape you decide on.
At this stage you can also mix vermiculite in the render which increases the insulation of the oven.
- If you are mixing your own render use 1 x Brickies Light to 8 x sand on the first coat.
- The second and third coat use a mix of 1 and 6
- If you add Bond crete to the last mix, it will strengthen the final coat.
- You can also add colored oxide to the last coat of render.
- Paint or finish dome as required.
Please note that if you wish to paint or seal the oven, let the oven cure (approx 10 days ).
- Wait a week before Pre firing the oven, follow the pre fire steps
TIPS
- Cutting the fire bricks- Score either side with a diamond blade then use a bolster to separate.
- The purpose of the 2 brackets at the back of the fascia is to tie the surround back to the oven with wire.
- 2 -3 layers of ceramic fibre insulation blanket increases the efficiency of the oven.
- Stand the oven on its entrance (upright) and draw a template of the oven base. This can be transferred to the concrete base to show you approximately where to lay your fire bricks.
Preparation of the footing and slab for a wood fired oven
Footing size is approximate 200mm x 300mm depending on the size of the blocks or bricks being used.
- Dig out a 100mm deep base with 200mm wide x 300mm deep footings,
- Reinforce with mesh and use PVC plastic under the base.
- Build walls using blocks or bricks.
- Build 100mm slab on top. Reinforce with mesh.
